This soup can be the base for any soup really. Just replace the cauliflower with any vegetable, and get creative with spices and herbs and toppings!
An example, I love pumpkin soup with a toasted pumpkin seed and coconut flake topping - YUM! Or make it broccoli and cannellini beans with crispy bacon (if you eat that, or make a vegan version if you don't)....soup is only limited by your imagination!
Cauliflower Soup with Crispy Garlic & Thyme Mushrooms
INGREDIENTS
Olive oil (to sauté the onion / garlic and the mushrooms)
1 onion, chopped
2 crushed garlic cloves (keep 1 for the mushrooms)
1 cauliflower, chopped into florets
500ml - 1 litre vegetable or chicken stock (enough to cover the cauliflower by about 1/2 inch and more if you want to change consistency after blending)
150g mushrooms (or more if you love mushrooms as they do shrink when cooked)
3-4 fresh thyme stems (remove leaves from the stem)
Coconut cream or milk (to drizzle on top)
METHOD
Sauté the onion and garlic in olive oil until onion is translucent
As it softens and the onion and garlic become fragrant, put in the cauliflower florets and cover with stock
Bring to the boil and then reduce to a simmer
Simmer until cauliflower is softened
Take off the heat and blend with a stick blender (be careful, the liquid will be hot so you can wait for it to cool before blending with the stick blender. If you only have a jug blender, wait until fully cool so that it doesn't explode!)
Add more stock or water if you want it to be thinner (remember you are adding the mushroom on top so you don't want it too thin)
Crispy Mushrooms
Slice mushrooms thinly
Crush garlic clove
Heat olive oil in pan, add mushrooms and garlic and cook until crispy
Just before the mushrooms are finished add the thyme leaves
To serve
Heat cauliflower soup
Add crispy mushroom mix on top and drizzle with coconut milk or cream
If you love thyme, you could also finish with some fresh thyme leaves.
